This is a very unique unit, as it would have been where the staff—including the O'Sullivan family's domestic help—prepared meals for the main house and resided. Because early kitchens were heat-intensive and posed fire risks, they were often situated in semi-separated or lower levels like this. The "Grotto" would have acted as a cool, secure location for storing bulk provisions and supplies, keeping them fresh and accessible for the servants.
