We chose Maison Aribert because of its 2* restaurant - and did indeed have a wonderful meal, full of subtle flavours from all the different vegetables and herbs, and exceptional fish dishes. There was no formally advertised wine pairing but the sommelier, after asking about preferences, put together an excellent, reasonably priced wine flight.
But I'd also recommend the hotel even if you don't eat in the main restaurant. The staff were extremely helpful and our room was lovely - very spacious with a striking, contemporary bathroom and a little balcony. There is a very tranquil small indoor pool in a separate building - an extremely relaxing space. We also very much enjoyed eating outside at the informal cafe restaurant on the second night - delicious, reasonably priced dishes. Breakfast was very good - best pain au chocolat I've tasted - although there wasn't a huge amount of choice (compared to many French hotels).
Nothing - although maybe consider swapping one of the breakfast cake choices for something savoury and/or including cheese on the buffet.
