Lovely minimalist and stylish design and interiors

The hotel itself is absolutely stunning. The room was lovely, the grounds were beautifully maintained, and the surrounding scenery and views of Mount Etna are spectacular. It’s a peaceful, luxurious setting and, in many ways, exactly what we were hoping for.
We also really enjoyed our evening in the Michelin starred restaurant. Aside from the issue with the allergy, the food itself was excellent. We thoroughly enjoyed the eight-course tasting menu, with each savoury course beautifully prepared and presented. The desserts were the only part of the menu that felt slightly underwhelming in comparison.
Unfortunately, the service throughout our stay left us feeling rather disappointed.
Before our stay, I emailed several weeks in advance requesting, if possible, a sea view room. When booking, we knew our room category had both garden and sea view options, so I simply expressed that it would be our preference. In the same email, I also mentioned that we would be celebrating my birthday and our 8-year anniversary. While I completely understand that requests can’t always be accommodated, it felt like our special occasions weren’t really acknowledged.
We were also disappointed by the handling of my partner’s nut allergy in the restaurant in the evening. Prior to our visit, the restaurant contacted us to ask about dietary requirements, and I clearly informed them of the allergy. When we arrived, no one mentioned it, which we assumed was because it had already been noted. However, once the dishes started arriving, I mentioned it to a member of staff just to be safe, only to discover they had no knowledge of it. Even more concerning, towards the end of the tasting menu, a different server presented the petit fours, several of which contained nuts. Thankfully, my partner didn’t eat them, but this should never happen in any restaurant, let alone one with a Michelin star.
The most disappointing aspect of our stay, however, was the hotel’s handling of my partner’s proposal. He had contacted the hotel in advance to let them know he planned to propose during our stay and had hoped they might be able to suggest a suitable location or help make the occasion memorable. Unfortunately, rather than offering any meaningful assistance or recommendations, the conversation seemed to focus more on purchasing a bottle of wine from the wine list. It felt more like an upselling opportunity than genuine hospitality.
After the proposal, I mentioned to a couple of members of staff that we had just got engaged.

The food was excellent and staff excellent, bed comfortable, and a good bathroom.
The train line just outside was a disappointment, and it ran from 7.00 till midnight, the room was also next the kitchen and it could be heard. Had to ask for towels by the pool and also for someone to take the drinks order.
